Asian Chicken & Vegetable Stir Fry

Maple Leaf Reduced Sodium Chicken Breast Strips 1.75 kg 3.9 lb
Vegetable oil 25 ml 1.7 tbsp
Onions, chopped 225 g 7.9 oz
Celery, chopped 225 g 7.9 oz
Red or green pepper, sliced 225 g 7.9 oz
Fish sauce 15 ml 1 tbsp
Soy sauce, low sodium 50 ml 1.7 Fl oz
Brown sugar 10 ml 2 tsp
Mango, diced, fresh or frozen 1 l 4.2 cups
Oriental vegetable medley, frozen, thawed 1 kg 2.2 lbs
Chicken stock, low sodium 500 ml 2.1 cups
Flour 25 ml 1.7 tbsp

Method

  • 1. Thaw Maple Leaf Cooked Chicken Breast Strips in steam table pan.
  • 2. Heat oil in large fry pan or on grill.
  • 3. Sauté onion, celery and peppers in heated oil, 3-4 minutes or until tender.
  • 4. Stir in fish and soy sauces and sugar.
  • 5. Add chicken, mango and vegetable and stir well.
  • 6. Dissolve flour in cold chicken stock. Pour over chicken mixture.
  • 7. Stir-fry 20-25 minutes or until internal temperature reaches 170°F (75°C).
  • 8. Transfer to steam table pans.

Suggested Accompaniments

Serve with cooked rice and a green salad.
