Spanish Beef and Tomato Stew

Maple Leaf Beef Ribette 25 each 25 each
Vegetable or Olive Oil 45 ml 1.5 FL oz
Onions, Fresh, Diced 450 g 1 Lbs
Celery, Fresh, Diced 100 g 3.5 oz
Garlic, Minced 100 g 3.5 oz
Red Peppers 450 g 1 Lbs
Tomatoes, Canned, Diced 300 ml 10.1 Fl oz
Black Pepper 5 ml 1 tsp
Salt 3 ml 0.5 tsp
Tomato Paste 150 ml 5.1 Fl oz
Oregano, dired 5 ml 1 tsp

Method

  • 1. In a large pot, heat the oil and saute onions, celery, garlic and red peppers until tender. Add canned tomatoes and tomato paste. Simmer for 30 minutes.
  • 2. Add beef ribettes, salt, pepper and oregano, simmer for another 20-30 minutes.
  • 3. Serve hot with accompaniments.

Suggested Accompaniments

Garnish with sour cream.

Serve over rice or with mashed potatoes and a vegetable side salad.
