Turkey Sausage Frittata

Maple Leaf Cooked Skinless Turkey Sausage, Chopped 12.5 Each 12.5 Each
Potatoes, Hashed Brown, Frozen 450 g 1 lbs
Green Peppers, Washed, Seeded, Chopped 500 ml 2 cups
Onions, Frozen, Chopped 500 ml 2 cups
Eggs, Medium 25 25
Cheddar Cheese, Low Fat, Old, Shredded 300 ml 1.3 cup
Thyme, Fresh, Washed, Chopped 25 ml 1.7 tbsp
Parsley, Fresh, Washed, Finely Chopped 300 ml 1.3 cup

Method

  • 1. Preheat oven to 163° C (325°F). Place sausages, potatoes, green peppers and onions in baking pans. Bake for 10 to 12 minutes or until internal temperature of sausage reaches 75°C (170° F).
  • 2. Pour eggs over sausage mixture. Bake for 10 minutes. Top with cheese and herbs. Continue to bake until centre of frittata is firm or internal temperature reaches 75°C (170° F). Cut into 25 squares and serve immediately.

Suggested Accompaniments

Garnish with chopped herbs.

Serve with chili sauce and warm cornbread and sliced tomatoes.
