German Potato Salad with Sauerkraut and Pork Sausage

Maple Leaf Cooked Country Pork Sausage 25 Each 25 Each
Red Potatoes, skin-on, boiled until tender 1.5 Kg 3.3 lbs
Bacon, cooked crisp 60 g 2 oz
Green Onions, chopped 80 g 2.8 oz
Dijon mustard 30 ml 1 fl oz
Light Mayonnaise 150 ml 5.1 fl oz
Sour Cream, 1% 100 ml 3.3 fl oz
Black Pepper, ground 3 ml 1/2 tsp
Sauerkraut 500 ml 2.1 cups


  • 1. Cut cooked potatoes and slice country sausage into bite size pieces.
  • 2. In a large bowl or pan, combine potatoes and sausage pieces with bacon, green onions, Dijon mustard, light mayonnaise, sour cream, black pepper and sauerkraut.
  • 3. Mix gently.

Suggested Accompaniments

Garnish with finely chopped green onions or chives.

Serve with leaf lettuce, tomato slices and cheddar cheese.
