Individual Italian Meatloaf Parmesan

Individual Meatloaf 25 pieces 25 pieces
Vegetable Oil 75 ml 2.5 Fl oz
Garlic, Finely Minced 25 ml 1.7 tbsp
Green Peppers, Julienne 750 ml 3.2 cups
Mushrooms, Sliced 1 L 4.2 cups
Pizza Sauce 1 L 4.2 cups
Cheese, Parmesan, Low-fat, Grated 300 ml 1.3 cup


  • 1. Preheat oven to 350°F (175°C).
  • 2. Defrost Individual Meatloaf portions under refrigeration 40°F (4°C).
  • 3. In large skillet, heat oil over medium-high heat for 2 minutes. Add garlic, green peppers cooking for 1 minute. Add mushrooms and garlic. Cook for 4 to 6 minutes or until vegetables begin to soften.
  • 4. Arrange meatloaf on two baking sheets. Top with 1/4 cup (60 ml) pepper mixture, 1/8 cup (30 ml) pizza sauce and 2 tbsp (30 ml) Parmesan cheese. Bake for 15 to 20 minutes or until 165°F (74°C).

Suggested Accompaniments

Serve on bed of whole wheat pasta with side salad.
