Penne with Sausage and Peppers

Maple Leaf Cooked Country Pork Sausage, cut diagonally 2 Kg 25 Each
Red Peppers, fresh, sliced 250 ml 8.5 fl oz
Garlic, minced 2 cloves 2 cloves
Basil, fresh 60 ml 2 fl oz
Olive Oil 125 ml 4.2 fl oz
Tomato Paste 125 ml 4.2 fl oz
Tomato Juice 500 ml 2.1 cups
Penne Pasta, cooked and drained 2 Kg 4.4 lbs
Salt 5 ml 1 tsp
Black Pepper, ground 2.5 ml 1/2 tsp


  • 1. In food processor, combine red peppers, garlic and basil. Process until finely chopped.
  • 2. In frying pan, heat oil over medium-high heat for 2 minutes. Add sausage cooking until browned.
  • 3. Add pepper mixture to sausage. Stir. Add tomato paste and juice. Cook for 1 minute to combine.
  • 4. Add pasta to sausage mixture and cook until 165°F (74°C). Serve immediately.

Suggested Accompaniments

Garnish with Parmesan cheese (not included in the nutritional analysis).

Serve with garlic bread and a small leafy green side salad.
