Pork Loin Chop with Maple Apricot Sauce

Apricots, canned 796 mL 3.4 cups
Beef, Au Jus 25 mL 0.9 fl oz
Oregano, dried 25 mL 0.9 fl oz
Basil, fresh 15 mL 1 Tbsp
Vinegar, White Wine or Rice 25 mL 0.9 fl oz
Black Pepper 5 mL 1 tsp
Salt 10 mL 2 tsp
Maple Syrup 750 mL 3.2 cups
Worcestershire Sauce 25 mL 0.9 fl oz


  • 1. Preheat oven to 350°F (177°C).
  • 2. Place pork chops in full steam pans.
  • 3. In large mixing bowl, combine apricots, beef au jus, oregano, basil, vinegar, pepper, syrup and Worcestershire Sauce. Stir to combine. Pour over pork chops. Cover pan with foil.
  • 4. Bake for 35 to 40 minutes or until pork reaches 165°F (74°C).

Suggested Accompaniments

Garnish with a slivered or finely chopped apricots. Serve with mashed potatoes and green beans (nutritional analysis not included in totals).
