| Frozen diced potatoes | 1.5 Kg | 3 lbs 5 oz |
| Canola oil | 90 mL | 1/3 cup |
| Salt | 5 mL | 1 tsp |
| Ground black pepper | 10 mL | 2 tsp |
| Cheddar & Jack cheese, shredded | 240 g | 8.5 oz |
| Bacon bits, 1/2 inch, RTE | 375 g | 13.2 oz |
| Green onions, chopped | 250 mL | 1 cup |
Method
- In a large bowl, combine frozen diced potatoes and oil. Toss with tongs to thoroughly coat them in the oil. Sprinkle with salt and pepper. Spread evenly onto a single layer of the baking sheet and bake until golden brown ~15-18 minutes.
- Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and bacon bits.
- Return the baking sheet to the oven and bake for an additional 5 minutes until the cheese has melted. Ensure the internal temperature reaches 165'F/74'C for a minimum of 15 seconds.
- Serve immediately or transfer to a 2" deep insert pan and cover with lid. At the point of service, sprinkle with sliced green onions.
Suggested Accompaniments
Serve with a garden salad and garnish with chopped green onion (sides not included in nutritional information).
