- Defrost shaved beef in the refrigerator overnight. In a large pot over medium heat, bring the beef broth, rosemary and mustard to a simmer. Reduce heat and reserve.
- In a large pan, add 1/2 cup of water and boil the diced onions until the water evaporates. Reduce heat and add 45 ml (3 Tbsp) canola oil and saute until onions are translucent. This will take approximately 10 minutes. Add bell peppers and saute for another 8-12 minutes and reserve.
- Add the beef to the broth to warm (approximately 5 minutes to heat). Ensure the beef reaches an internal temperature of 165 F (74 C). At service, add 60 g (2 oz) of beef to the bun, ladle 1 15 ml (1 Tbsp) of broth over the top of the sandwich. Top with peppers and onions, and serve.
Serve with potato salad, leaf lettuce salad or a composed salad of steamed vegetables tossed in Italian dressing (sides not included in nutritional analysis).
