- Wash and cut peppers and red onions into rough triangle cut 1"" pieces similar to the chicken thigh piece size.
- Sautee peppers, onions and black olives along with the thawed chicken pieces until vegetables are cooked and chicken is above 160 F/70 C.
- Cook basmati rice in water, following package directions.
- Serve on a bed of basmati rice (approx. 85 gm) covered with a serving of the chicken mixture (approx. 183 gm or 6 ounces). Garnish with crumbled feta cheese (10 mL) over the top of the dish and finish with a serving of tzatziki sauce (10 mL). Alternately, cook basmati rice in chicken stock (Nutritional analysis will be different.)
