| Canola Oil | 30 mL | 2 Tbsp |
| Green Peppers, Fresh, sliced or diced | 350 g | 12.3 oz |
| Red Peppers, Fresh, sliced or diced | 350 g | 12.3 oz |
| Tomatoes, canned, diced | 300 mL | 1.3 cups |
| Black Olives, pitted, halved or sliced | 250 mL | 1.1 cups |
| Garlic, Fresh, minced | 30 g | 1 oz |
| Black Pepper | 10 mL | 2 tsp |
Method
- On the stove top, preheat a large pan or pot and add canola oil, green peppers, red peppers, onions and garlic. Saute until tender but still crispy. Move to a large pan for finishing in the oven.
- Add all ingredients into the large pan. Cover pan(s) with foil and bake in a preheated 350 F oven for 25 minutes, heating the chicken to an internal temperature of 165 F (74 C).
Suggested Accompaniments
Garnish with lemon slices. Serve with rice and Greek salad (nutritional analysis not included in totals).
