Middle Eastern Chicken Thigh Strips

Chicken Shawarma (Halal) 1.6 Kg 3.5 Lbs
Lemon Juice 90 mL 3 fl oz
Rosemary, dried 15 mL 1 Tbsp
Onions, Fresh, diced 200 g 7 oz
Canola Oil 30 mL 2 Tbsp
Green Peppers, Fresh, sliced or diced 350 g 12.3 oz
Red Peppers, Fresh, sliced or diced 350 g 12.3 oz
Tomatoes, canned, diced 300 mL 1.3 cups
Black Olives, pitted, halved or sliced 250 mL 1.1 cups
Garlic, Fresh, minced 30 g 1 oz
Black Pepper 10 mL 2 tsp


  • 1. On the stove top, preheat a large pan or pot and add canola oil, green peppers, red peppers, onions and garlic. Saute until tender but still crispy. Move to a large pan for finishing in the oven.
  • 2. Add all ingredients into the large pan. Cover pan(s) with foil and bake in a preheated 350 F oven for 25 minutes, heating the chicken to an internal temperature of 165 F (74 C).

Suggested Accompaniments

Garnish with lemon slices. Serve with rice and Greek salad (nutritional analysis not included in totals).
