Pork Mushroom Stroganoff

Vegetable Oil 60 mL 2 fl oz
Pork Loin Chops 25 Each 25 Each
Mushrooms, fresh, sliced 2 L 8.5 cups
Onions, fresh, diced 1 L 4.2 cups
Cornstarch 125 mL 4.2 fl oz
Sour Cream 3 L 12.7 cups
Dijon Mustard 60 mL 2 fl oz
Paprika 25 mL 0.9 fl oz
Egg Noodles, cooked 3 L 12.7 cups


  • 1. In large skillet, heat oil over medium-high heat for 1 minute. Add pork, mushrooms and onions. Sauté for 4 to 8 minutes, stirring constantly until pork is browned and reaches 165°F (74°C).
  • 2. In mixing bowl, stir together cornstarch and sour cream. Add to pork mixture.
  • 3. Add mustard and paprika to pork mixture. Continue to cook to 5 to 8 minutes or until reaches 165°F (74°C).
  • 4. Serve 1 cup (250 ml) Pork Stroganoff with sauce over 1/2 cup (125 ml) Egg Noodles.

Suggested Accompaniments

Garnish with a fresh chopped parsley and a light dusting of paprika. Serve on garden vegetable salad (nutritional analysis not included in totals).
