Tomatoes, canned, diced (drained) 1.3 L 5.5 cups
Soy Sauce (low sodium) 60 mL 3 Tbsp
Ketchup, prepared 125 mL 4.2 Fl oz
Ginger, dried, ground 15 mL 1 Tbsp
Garlic, minced 30 mL 3 Tbsp
Black Pepper 10 mL 2 tsp


  1. Preheat convection oven or combi oven to 275 F. Ensure that the pork is fully defrosted. The seasonings stick to the meat and cook better when the pork is defrosted.
  2. In a large pot over medium heat, add the tomatoes, soy sauce, ketchup, ginger, garlic and black pepper. Bring to a boil and then simmer for 5 minutes to let the flavours develop. Stir occasionally and reserve.
  3. In a deep parchment lined roasting pan add all the raw pork chops and top with the tomato mixture. Cover tightly with foil and braise at 275 F for 40-50 minutes, depending on the heat of the oven. Bake until the internal temperature of the pork chops reach 165 F (74 C). Serve hot.

Suggested Accompaniments

Garnish with toasted sesame seeds. Serve with green onion studded rice, steamed snow peas and bell peppers (garnish and sides not included in nutritional analysis).
