Method
- Defrost Chicken Souvlaki pieces in the refrigerator overnight. In a large skillet or pot, heat oil and add sliced green peppers and sliced onions, saute for 7-10 minutes or until the vegetables are soft. Add garlic and saute 1 additional minute. Add fire roasted canned tomatoes, dried oregano and dried basil. Simmer for 1 hour, allowing some liquid to evaporate and begin to thicken.
- Add the thawed chicken pieces directly to the sauce and simmer for 30 minutes, allowing all the flavours to combine.
- Prior to serving, if the dish is too dry, add tomato puree to moisten.Finish with chopped parsley prior to service.Serve chicken and a generous amount of sauce and vegetables over basmati rice (or preferred rice) which has been cooked separately. Alternately, if using canned tomatoes that are more bland, consider adding more garlic, oregano and basil to the sauce. If the sauce is too thin after simmering, add 75 mL of canned tomato paste to thicken further (to 1.5 L of canned tomatoes). (Nutritional Analysis will be different.)
