Method
- Heat olive oil in a large pan or grill. Add onions and saute until golden. Add tomatoes and garlic, stirring gently until done. Line 2" deep hotel pans with sausages and add the sauted vegetables over the top.
- Place hotel pans in a pre-heated 350 F (175 C) oven and bake until sausages are hot.
- Serve over accompaniment dishes or to the side.
Suggested Accompaniments
Garnish with fresh oregano either at the end or at the desired point in the cooking process (step 1).
Serve with scrambled eggs or breakfast breads.
