Method
- In a small bowl, whisk together mayonnaise and pesto. Cover with wrap and maintain at <4'C/40'F until ready to assemble sandwiches.
- Using meat slicer, thinly slice meat and portion out 40 g/1.4 oz per portion. Maintain at <4'C/40'F until ready to assemble sandwiches.
- Assemble sandwiches: Place half of bread slices on a clean surface. Spread 10 mls/2 tsp mayonnaise/pesto spread on each slice of bread. Layer with 1 slice (19g/0.7 oz) provolone cheese, then 40 g/1.4 oz of deli ham, followed by another slice of provolone cheese and lastly top with a slice of bread. Place in insert pan and cover with lid. Maintain at <4'C/40'F until ready to grill sandwiches.
- Grill sandwiches: Brush sandwiches with melted margarine. Preheat grill to 162'C/325'F. Grill sandwiches on both sides until golden brown and cheese melts. Internal temperature must reach 71'C/160'F for a minimum of 15 seconds. Transfer sandwiches to insert pan(s) with parchment paper between layers and cover with lid until service. Hold at >140'F/60'C until service.
- At point of service, cut each sandwich into half on the diagonal.
Suggested Accompaniments
Serve with a bowl of minestrone soup/broth based vegetable soup or a vinaigrette green salad; may offer additional mayonnaise pesto sauce as a dip (sides not included in the nutritionals).
