Romain, lettuce, chopped | 1.5 Kg | 3 lbs 5 oz |
Blueberries, fresh | 675 g | 1 lb 8 oz |
Peaches, sliced, drained | 1 Kg | 2 lbs 3 oz |
Goat, cheese, crumbled | 750 g | 1 lb 11 oz |
Olive oil | 375 mL | 1 1/2 cups |
Balsamic vinegar | 125 mL | 1/2 cup |
Honey | 75 mL | 1/4 cup |
Dijon mustard | 50 mL | 3 Tbsp 1 tsp |
Tarragon, try | 30 mL | 2 Tbsp |
Method
- Slice the ham into thin slices (20 g) on meat slicer. Roll each ham slice, cut in half and place it into an insert pan. For ease of labor, may Julienne ham slices. Cover with wrap. CCP- Maintain < 40°F/4°C until ready to assemble salad.
- Wash, dry, and chop romaine lettuce and place in a large bowl. Wash and drain the fresh, blueberries or alternatively use frozen and drain. Drain peach slices. Set aside for a later step.
- Crumble goat cheese. CCP-Maintain <40°F/4°C until ready to assemble salad.
- In a small bowl, whisk together, olive oil, balsamic vinegar, honey, Dijon, mustard, tarragon, and salt/pepper to taste. Cover and wrap. Alternatively, may use a purchased vinaigrette dressing which will increase the sodium content. Set aside for point of service.
- In a large bowl, toss lettuce, blueberries, peach slices, and goat cheese. CCP-maintain < 40°F/4°C until ready to assemble salad.
- At the point of service, at the salad dressing to the pool and toss the salad mixture. Please let us a mixture onto a plate or bowl in place 50 g of road/Julie and him on top of each salad. May garnished with chopped nuts or candied pecans. Served immediately.
- Just hard after three days it’s not used.
Suggested Accompaniments
Serve with a warm, buttered bun, and garnish with chopped tarragon, if desired (sides not included in nutritional information).
