- Preheat convection or Combi oven to 375 G. Ensure the chicken is fully defrosted. The seasonings stick and the chicken will cook better.
- In a large bowl, combine the lemon juice, lemon zest, ginger, black pepper, thyme and canola oi. Toss with defrosted chicken and let marinate for 20 minutes.
- Place chicken on parchment lined baking sheets, make sure not to overlap the chicken pieces. Roast in the oven for 20-25 minutes, depending on the heat of the oven. Ensure the chicken reaches an internal temperature of 165 F (74 C) prior to serving.
Garnish with lemon wedge and finely chopped herbs. Serve with steamed rice and green vegetables (garnish and side dishes are not included in the nutritional analysis).
