|Apple Juice||250 ml||1 cup|

- Preheat convection oven to 300'F/150'C. Pour apple juice onto bottom of roasting pan. Place toupie ham in pan and cover with foil. Bake toupie ham for approximately 12-15 minutes per lb/0.5 kg.
- Combine maple syrup, red wine vinegar, dijon mustard, and mustard spice in a bowl. Set aside.
- In the last 30 minutes of cooking, brush prepared glaze over the toupie ham. Do not cover the ham with foil and return to oven. Cook until the glaze is caramelized and the internal temperature reaches 140'F/60'C.
- Slice the prepared ham into 90 gram servings.
Serve with potato of your choice and sauteed green beans (sides not included in the nutritional analysis)
