|Black Olives, pitted, halved or sliced||250 mL||1.1 cups|
|Garlic, Fresh, minced||30 g||1 oz|
|Black Pepper||10 mL||2 tsp|
- On the stove top, preheat a large pan or pot and add canola oil, green peppers, red peppers, onions and garlic. Saute until tender but still crispy. Move to a large pan for finishing in the oven.
- Add all ingredients into the large pan. Cover pan(s) with foil and bake in a preheated 350 F oven for 25 minutes, heating the chicken to an internal temperature of 165 F (74 C).
Garnish with lemon slices. Serve with rice and Greek salad (nutritional analysis not included in totals).
