Korean barbeque sauce | 375 mL | 1 1/2 cup |
Honey | 175 mL | 3/4 cup |
Sesame oil | 160 mL | 2/3 cup |
Garlic, minced | 35 g | 1.2 oz |
Carrots, fresh, julienne | 750 g | 1 lb 11 oz |
Broccoli florets, frozen, thawed | 1.5 Kg | 3 lbs 5 oz |
Method
- Two days before, thaw the cooked beef steak strips in the refrigerator at < 4°C/60°F.
- In a small bowl, whisk together Korean style sauce, and honey; and set aside.
- In a large skillet, heat sesame oil and add the minced garlic and stir until fragrant; then sauté carrots, and broccoli. Cook for approximately 5 to 10 minutes or until softened. Add the cooked, shaved steak to the vegetable mixture and pour the sauce over the ingredients. CCP-cook to an internal temperature of 165°F/74°C held for at least 15 seconds.
- At the point of service, serve 175 mL/6 ounces per serving. Garnish with chopped green onions. CCP-maintain: product held at above 140°F/60°C. Temperature should be taken every two hours during holding.
- Discard unused product.
Suggested Accompaniments
Garnish with sprinkle of chow mein noodles (sides not included in the nutritional information).
