| Cornstarch | 95 mL | 1/3 cup + 15 mls |
| Pineapple Tidbits, juice packed, undrained | 1.7 L | 6 3/4 cups |
| Apple Cider Vinegar | 250 mL | 1 cup |
| Soy Sauce, reduced sodium | 45 mL | 3 Tbsp |
| Green Pepper, fresh, diced | 190 g | 7 oz |
| Red Pepper, fresh, diced | 250 g | 9 oz |
| Green Onion, chopped | 240 g | 8 oz |
Method
- Preheat convection oven to 325'F/165'C. Place frozen meatballs in a greased 2" deep insert pan.
- Prepare the Sauce; combine brown sugar and cornstarch in a saucepan. Add undrained pineapple tidbits, apple cider vinegar, and soy sauce; cook and stir until thickened and bubbly. Add diced green and red peppers.
- Pour sauce over meatballs; gently stir. Cover and bake for 40 minutes. CCP-Cook to an internal temperature of 165F/74C held for at least 15 seconds.
- At point of service, garnish with chopped green onions.
Suggested Accompaniments
Serve over steamed rice and with a green vegetable i.e. broccoli, green beans. Garnish with chopped green onions (sides not included in the nutritional information)
