- Preheat oven to 163° C (325°F). Place sausages, potatoes, green peppers and onions in baking pans. Bake for 10 to 12 minutes or until internal temperature of sausage reaches 75°C (170° F).
- Pour eggs over sausage mixture. Bake for 10 minutes. Top with cheese and herbs. Continue to bake until centre of frittata is firm or internal temperature reaches 75°C (170° F). Cut into 25 squares and serve immediately.
Garnish with chopped herbs.
Serve with chili sauce and warm cornbread and sliced tomatoes.
