- Preheat convection or combi oven to roast at 375 F. Lay out pizza dough shells on parchment lined baking sheets. Make sure not to overlap the shells so that they crisp up completely.
- Sauce the top of the pizza shells with pesto, then add a thin layer of cheese, 59 g (2 oz) of chicken breast strips, a few slices of green zucchini and then another thin layer of cheese. Repeat this process for all pizza dough shells.
- Roast in the oven for 8-12 minutes, depending on the heat of the oven. The cheese should be fully melted and the prepared pizza shells should be crispy.
Serve with a green salad garnished with shredded carrot, cherry tomato, cucumber slices and a vinaigrette dressing (not included in nutritional analysis).
