Breaded Veal With Sweet Apple Pepper Sauce

Breaded Veal Cutlet 25 Each 25 Each
Olive Oil 60 ml 2 Fl oz
Onions, Finely chopped 250 ml 1.1 cup
Red Peppers, Finely chopped 250 ml 1.1 cup
Yellow Peppers, Finely chopped 250 ml 1.1 cup
Green Peppers, Finely chopped 250 ml 1.1 cup
Applesauce, unsweetened 1.5 l 6.3 cups

Method

  • 1. Preheat oven to 375°F (190° C).
  • 2. Arrange veal on baking sheets. Bake for 15 to 20 minutes, turning once during the baking. Internal temperature must reach 165° F (74° C).
  • 3. In large skillet, heat oil over medium-high heat for 2 minutes. Add onions and peppers. Cook for 3 to 4 minutes or until onions begins to soften. Add applesauce and continue to cook until sauce starts to boil.
  • 4. Top veal with 1/3 cup (75 ml) of sauce. Serve immediately.

Suggested Accompaniments

Garnish with sliced apple or finely chopped apple. Serve with mashed sweet potato and green beans.
