Curried Beef Wrap

Maple Leaf Sure Slice Roast Beef 1.5 Kg 3.3 lbs
Olive Oil 60 ml 0.26 cup
Onion, Fresh, Sliced 750 ml 3.3 cups
Red Peppers, Fresh, Sliced 750 ml 3.3 cups
Garlic, Finely Chopped 15 ml 1 tbsp
Sour Cream, 2% 375 ml 1.58 cups
Curry Powder, Mild 15 ml 1 tbsp
Paprika 5 ml 1 tsp
Whole Wheat Tortilla, 20 cm ( 8") 25 each 25 each
Spinach, Washed, Stemmed 1.5 L 6.3 cups

Method

  • 1. In a large skillet, heat oil over medium-high heat for 2 minutes. Add onions, red peppers, and garlic. Sauté for 4 to 6 minutes or until for tender.
  • 2. Combine sour cream, curry powder, and paprika.
  • 3. Spread each tortilla with 15 ml ( 1 tbsp) curry sauce. Top with 60 g ( 2.1 oz) Maple Leaf Sure Slice Roast Beef, 60 ml ( 0.26 cup) pepper mixture, and 60 ml ( 0.26 cup) spinach over 3/4's of tortilla.
  • 4. Fold up bottom quarter and roll to secure. Place seam down on tray.
  • 5. Cover with damp cloth and refrigerate at 4°C ( 40°F) until service.

Suggested Accompaniments

Garnish with strips of red pepper and broccoli florets.

Serve with a cucumber salad.
