- In a large pot or skillet, heat olive oil and add onions, saute until cooked but translucent.
- Add zucchini slices, white pepper and minced garlic, continue to saute for 4-5 minutes until vegetables are cooked.
- Add cooked bacon that is cut into 1"" (2.5 cm) pieces and also add the chicken. Continue to saute until all is combined and chicken is above 160 F/70 C.
- Finish with parmesan cheese and fresh chopped parsley.
Serve with cooked pasta or other suitable grain (not included in nutritional analysis).
