Method
- Wash and slice all vegetables. In a large skillet, heat olive oil. Add peppers and onions, grill and toss, caramelize the onions - cooking 5-7 minutes, tossing frequently.
- Add garlic, lime juice, pepper, soya sauce, ketchup and ginger ale. Toss another few minutes until vegetables are tender and carmelized, allow some of the liquid to steam off but keep the mixture wet.
- Add the pulled pork and cooked rice. Bring the mixture up to temperature (160F/70C). Place into hotel pans approximately 1.5"-2" thick.
- Sprinkle lightly with lime zest and parsley. Cover with cheddar cheese and melt in a pre-heated oven. It is ready to serve as a casserole either cut into squares or evenly portioned with a spoon. Serving is 6 oz (180 gm).
