Method
- The day before, thaw the chicken wieners and the puff pastry dough sheets on sheet pan(s) under refrigeration at <40'F/4'C.
- Wash hands before beginning preparation and sanitize surfaces & equipment. Lightly flour a clean surface and roll each puff pastry to approximately 10" x 15" in size (per 342 g/12 oz) using a rolling pin. Cut each rolled sheet into 8 equal strips, yielding strips approximately 2" wide and 5" long.
- Preheat the convection oven to 375'F/190'C.
- Cut each swiss cheese slice (20 g) into half lengthwise. Place 2 cheese halves lengthwise along each puff pastry strip. Place on thawed chicken wiener on top of the cheese. Wrap the puff pastry around the wiener on the bias, leaving approximately 1 inch of each end exposed. Place wrapped wieners on foil-lined baking sheet(s) spacing them at least 1 inch apart.
- Prepare egg wash-in a small bowl, crack eggs and add water. Whisk until fully blended. Brush the tops of the wrapped wieners lightly with egg wash. Sprinkle generously with the everything bagel seasoning.
- Place the wrapped chicken dogs in the preheated oven and bake for ~ 20 minutes or until the puff pastry is fully puffed and light golden brown. CCP-cook to an internal temperature of 165'F/74'C is reached for at least 15 seconds.
- Transfer to insert pan in a single layer with lid. Best if served immediately. CCP-Hold at>140'F/60'C until service.
Suggested Accompaniments
Serve with mustard and a tossed garden salad or crisp vegetables & ranch dip (sides not included in the nutritional information).
