|Onions, Fresh, diced||475 mL||2 cups|

- In a bowl, combine the thawed chicken thighs, olive oil and spices. Toss to coat and place drumsticks on a parchment-line baking sheet. Bake chicken in a pre-heated 350 F convection oven and cook chicken to an internal temperature of 165 F (74 C).
- Place cooked chicken in a hotel pan (large pan) and add the remaining ingredients. Toss gently to combine all ingredients.
- Cover pan with foil and bake in a 400 F oven for 45 minutes.
Serve with brown rice and green side vegetables (not included in the nutritional analysis).
