Method
- In a large skillet, heat oil over medium-high heat for 2 minutes. Add onions, red peppers, and garlic. Sauté for 4 to 6 minutes or until for tender.
- Combine sour cream, curry powder, and paprika.
- Spread each tortilla with 15 ml ( 1 tbsp) curry sauce. Top with 60 g ( 2.1 oz) Maple Leaf Sure Slice Roast Beef, 60 ml ( 0.26 cup) pepper mixture, and 60 ml ( 0.26 cup) spinach over 3/4's of tortilla.
- Fold up bottom quarter and roll to secure. Place seam down on tray.
- Cover with damp cloth and refrigerate at 4°C ( 40°F) until service.
Suggested Accompaniments
Garnish with strips of red pepper and broccoli florets.
Serve with a cucumber salad.
