- Cut sausages into slices, set aside. Boil water and add penne, cook to al dente or until just done, also set aside.
- In a large preheated pot, add olive oil and gently saute red onions, red peppers and garlic until tender. Add Italian sausage, cooked penne and salt. Toss until combined and hot.
- Finish dish with parsley just before serving.Garnish with parmesan cheese, either in the dish itself or on top prior to service (garnish is included in the nutritional analysis below)
Serve with crusty Italian bread and a Caesar side salad.
