Method
- Cut cooked potatoes and slice country sausage into bite size pieces.
- In a large bowl or pan, combine potatoes and sausage pieces with bacon, green onions, Dijon mustard, light mayonnaise, sour cream, black pepper and sauerkraut.
- Mix gently.
Suggested Accompaniments
Garnish with finely chopped green onions or chives.
Serve with leaf lettuce, tomato slices and cheddar cheese.
