- In a large pot or skillet, add 250 mL (8.45 Fl oz) water, honey, lemon juice and minced fresh ginger. Bring to a boil and simmer for 20 minutes to combine the flavours.
- Taste the sauce and add a small amount of sugar if too tart or add some lemon juice if too sweet - balance the sauce. Combine the cornstarch and 50 mL (1.7 Fl oz) water into a slurry and use to thicken the sauce.
- Place the chicken dippers on a greased baking pan, put into a pre-heated 350 F (175 C) oven and bake until heated through (to 160F/70C) and the outside begins to crisp up.
- Add chicken dippers to the sauce and coat completely, serve hot in a short period of time to maintain some crunch of the chicken dipper. An alternative is to provide the baked chicken dippers with the honey lemon sauce as a side dipping sauce.
