Lemon Juice | 125 ml | 4.2 fl oz |
Orange Juice | 500 ml | 2.1 cups |
Salt | 3 ml | 1/2 tsp |
Cornstarch | 25 ml | 0.9 fl oz |
Water | 50 ml | 1.7 fl oz |
Method
- In a sauce pot; add the lemon juice, orange juice and salt. Heat until simmering.
- In a small bowl combine the cornstarch and water with a spoon or whisk to form a paste. Add this mixture to the simmering juices by whisking and stir slowly until thick and set aside.
- Pre-heat a large pan or grill and add 15ml of canola oil. When pan/grill is hot, add sliced chicken (thawed) and sauté until sides are browned. Sauté chicken until an internal temperature of 165 degrees is reached, or about 10 minutes. Once chicken is cooked through set aside.
- Pre-heat a large pan or grill again and add 15ml of canola oil. When pan is hot, add frozen Asian vegetable mix and sauté until al dente. Once vegetables are cooked, add chicken and finish with the orange sauce. Toss gently until mixed well.
Suggested Accompaniments
Serve over a bed of cooked rice.
