| Tomato Paste | 125 ml | 4.2 fl oz |
| Tomato Juice | 500 ml | 2.1 cups |
| Penne Pasta, cooked and drained | 2 Kg | 4.4 lbs |
| Salt | 5 ml | 1 tsp |
| Black Pepper, ground | 2.5 ml | 1/2 tsp |
| Parmesan Cheese, grated | 375 ml | 1 1/2 cups |
Method
- In food processor, combine red peppers, garlic and basil. Process until finely chopped.
- In frying pan, heat oil over medium-high heat for 2 minutes. Add sausage cooking until browned.
- Add pepper mixture to sausage. Stir. Add tomato paste and juice. Cook for 1 minute to combine.
- Add pasta to sausage mixture and cook until 165°F (74°C) held for 15 seconds. Serve 216 g serving and garnish with 1 Tbsp/15 ml of grated parmesan cheese on top.
Suggested Accompaniments
Garnish with Parmesan cheese (not included in the nutritional analysis).
Serve with garlic bread and a small leafy green side salad.
