Method
- The day before, on parchment lined sheets, cut the raw bacon into half slices lengthwise and place bacon on sheet pan(s). Preheat convection oven to 375F (190C). Place sheet pan(s) in oven until desired cook level is achieved and until internal temperature reaches 160F (71C) for a minimum of 15 seconds. Pat with paper towels to remove any grease drippings and placed cooked bacon slices in insert pan(s) with lid and hold in refrigerator at <40F (4C).
- Preheat convection oven to 350F(177C). Place turkey burgers on parchment lined sheet pan(s) in single layers.
- Spread each burger with 1 tsp(5 ml) of barbeque sauce. Top with 2 half slices of cooked bacon on top of the burger. Place 1 slice 0.7 oz (21 g) provolone cheese on top of the bacon.
- Finely dice the red, green and yellow/orange bell peppers and place in a small bowl. Add the finely diced onions and mix together. Sprinkle 2 tsp (10 ml) of mixed pepper and onion mixture on top of the cheese.
- Place sheet pan(s) in the oven and bake for ~8-10 minutes until the internal temperature of the burger reaches 165F (74C) for a minimum of 15 seconds. Transfer to insert pan(s) in single layers and cover with a lid. Hold at >140F (60C) until service. At point of service, may cut each burger into half on a diagonal and serve 2 each.
Suggested Accompaniments
Serve with roasted potatoes and steamed vegetable medley or crisp garden salad (sides not includes in the nutritional information)
