- In large pot, heat oil over medium high heat for 1 minute. Add garlic, rice and sausage and heat for 5 to 7 minutes or until sausage internal temperature reaches 75°C (170°F) .
- Add mixed vegetables, salsa and water. Cover and continue to heat over medium-high heat until rice begins to soften.
- Add shrimp to rice and continue to cook over low heat for 10 to 15 minutes or until shrimp is cooked and sausage internal temperature reaches 75° C (170°F).
Garnish with finely chopped coriander.
Serve on bed of steamed greens.
