Method
- Preheat the convection oven to 375'F/190'C.
- Heat oil in a large frying pan over medium-high heat and cook ground beef. Crumble ground beef well while cooking and cook to an internal temperature of 145F/63C. Drain excess fat grease from the pan.
- Dice fresh onions or alternatively use frozen, diced onions and add to the pan with the ground beef and stir well. Continue cooking for a few minutes, stirring occasionally until the onions are al dente.
- Remove the pan from the heat and add bacon pieces, mayo, ketchup, mustard, pepper and onion powder. Stir well. Set aside for a later step.
- Spread margarine on the bread slices and then cut them in half. Spray 2" deep insert pan(s) with cooking spray and lay half of the bread slices, margarine side down in the baking pan.
- Mix the shredded cheddar and mozzarella cheese in a bowl. Sprinkle half of the cheese on top of the bread. Spoon the meat mixture on top of the cheese and spread it out evenly. Sprinkle the remaining half of the cheese over the meat.
- Lay the last half of the bread slices, margarine side up, on top of the casserole.
- Place the pan in the preheated oven and bake until the top bread is golden brown, approximately 15-20 minutes, or until internal temperature reaches 160F/71C for a minimum of 15 seconds. Serve 1/2 sandwich per serving.
