|Tarragon, dried||15 mL||1 Tbsp|

|Celery, fresh, diced||250 g||9 oz|

- Thaw the cooked diced chicken under refrigeration at <40'F/4'C.
- Whisk the mayonnaise, sugar and dried tarragon together in a large bowl. Season with salt and pepper. Hold at <40'F/4'C until service.
- Mix washed baby spinach leaves, thawed frozen peas, chopped celery, fresh washed blueberries and quartered strawberries in a large bowl. Cover with plastic wrap until service. Chill under refrigeration at <40'F/4'C.
- At point of service, pour dressing over salad. Place 60 grams of thawed diced chicken on salad and toss.
Serve on a bed of fresh baby spinach with a buttered wholegrain roll (sides not included in the nutritional information).
