- The day before, thaw raw chicken legs under refrigeration at <40'F/4'C. Preheat convection oven to 375'F/190'C.
- Place thawed chicken legs on a parchment-lined backing sheet. Brush the chicken legs with olive oil and sprinkle chipotle mango spice on all sides of the legs. Place chicken legs in oven; bake for ~ 25-30 minutes or until the chicken reaches an internal temperature of 165'F/74'C held for a minimum of 15 seconds. Rotate the legs after 10 minute to ensure all sides are crispy.
- While chicken legs are baking, prepare fresh mango salsa. In a serving bowl, combine the prepared mango, cucumber, red pepper, red onion, cilantro and garlic. Drizzle with lime juice. Using a large spoon, stir the ingredients together. Season with salt and stir again. For best flavour, let the salsa rest for 10 minutes or longer. Hold at >40'F/4'C until service.
- At point of service, serve 1 chicken leg with 30 mls/2 Tbsp of prepared mango salsa over top.
Serve with baked potato, grilled peppers and avocado slices (sides not included in the nutritional information)
