|Frozen diced potatoes||1.5 Kg||3 lbs 5 oz|
|Canola oil||90 mL||1/3 cup|

|Cheddar & Jack cheese, shredded||240 g||8.5 oz|
|Bacon bits, 1/2 inch, RTE||375 g||13.2 oz|
|Green onions, chopped||250 mL||1 cup|
- In a large bowl, combine frozen diced potatoes and oil. Toss with tongs to thoroughly coat them in the oil. Sprinkle with salt and pepper. Spread evenly onto a single layer of the baking sheet and bake until golden brown ~15-18 minutes.
- Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and bacon bits.
- Return the baking sheet to the oven and bake for an additional 5 minutes until the cheese has melted. Ensure the internal temperature reaches 165'F/74'C for a minimum of 15 seconds.
- Serve immediately or transfer to a 2" deep insert pan and cover with lid. At the point of service, sprinkle with sliced green onions.
Serve with a garden salad and garnish with chopped green onion (sides not included in nutritional information).
