- Preheat convection or combi oven to roast at 300 F. Ensure the chicken drumsticks are fully defrosted. The seasonings will stick and cook better when defrosted.
- In a large bowl, combine the tomato sauce, chicken stock, thyme, ginger, curry, cinnamon, cumin, garlic and green onions. Reserve for later.
- In a 4" deep hotel pan, place all the chicken drumsticks, then add the carrots, potatoes and peas on top. Add the prepared sauce and mix within the pan. Ensure all of the chicken legs are covered with braising sauce.
- Cover with foil and roast at 300 F for 1.75-2 hours, depending on the heat of the oven. Ensure the chicken reaches an internal temperature of 170 F (77 C) prior to serving.
Plate the chicken with the braising liquid. Serve with steamed rice and green vegetables (both sides are not included in the nutritional analysis).
