Method
- Place frozen sausages in a hotel pan and thaw in refrigerator over night. Use whole or cut-up into pieces (your choice).
- In a heavy-bottomed pot over medium heat, add oil and saute onions and peppers for 5-8 minutes, stirring occasionally.
- Add the sausage, tomatoes, potatoes, chicken broth, water, paprika, black pepper and garlic. Bring to a boil and then turn down to a simmer. Cook for 45-55 minutes.
- Thicken stew with a cornstarch and water mixture. Ensure that the stew has reached an internal temperature of 165 F (74 C). Serve hot with accompaniments.
Suggested Accompaniments
Garnish with chopped fresh herbs like parsley and a spoon of sour cream on top of the dish when served. Serve with fresh bread or biscuits (not included in nutritional analysis).
