- Preheat convection or Combi oven to 350 F. Slice the corned beef into strips.
- In a parchment lined 2" hotel pan, combine the corned beef strips, peas, fresh dill, dried potatoes, water, and sauce mix for potatoes. Mix well.
- Bake for 45-60 minutes, depending on the heat of the oven. Ensure that the casserole does not dry out. Ensure that the dish reaches an internal temperature of 165 F (74 C).
Garnish with chopped fresh dill on top. Serve with a green vegetable or salad side dish (nutritional analysis not included).
