| BBQ Sauce, prepared | 720 mL | 3 Cups |
| Garlic, minced | 60 mL | 1/4 Cups |
| Vegetable Oil | 30 mL | 2 Cups |
| Brown Sugar | 180 mL | 3/4 Cups |
| Chili Powder | 30 mL | 2 Tbsp |
| Vinegar | 120 mL | 1/2 Cup |
| Water | 120 mL | 1/2 Cups |
Method
- Season the pork side ribs with salt and pepper, place on a parchment lined baking sheet and cover with foil. Place in a 300 F pre-heated oven for 2.5 hours or until ribs are tender.
- While the ribs are baking, make the sauce: Heat oil in a medium pot, add garlic and saute for 2-3 minutes. Add the remaining ingredients and simmer for 15 minutes to combine flavours. Baste ribs with 1/2 of the BBQ sauce batch after 1 hour of baking, and then return the ribs to oven to finish cooking.
- Heat the ribs to an internal temperature of 165 F (74 C) and until tender. Once the ribs are fully cooked, transfer to hotel pans and brush the tops of the ribs with the remaining Sweet & Spicy sauce and place back into the oven for 20 minutes to caramelize the ribs.
Suggested Accompaniments
Garnish with sauce from the pan. Serve with roasted potatoes and a spinach-strawberry salad (not included in nutritional analysis).
